BUTTER BEAN AND FETA BRUSCHETTA

LASCO BUTTER BEAN AND FETA BRUSCHETTA

INGREDIENTS

1 can LASCO® Butter Beans, drained and rinsed (400g)

1 small red onion, finely chopped 

2 cloves garlic, minced 

2 tbsps. olive oil 

1 tbsps. balsamic vinegar 

½ tbsps. ground cumin 

¼ tsp. cayenne pepper 

4 slices of crusty bread 

¼ cup crumbled feta cheese
 

Salt and pepper to taste 

Fresh parsley or cilantro for garnish

Instructions

Step 1

Prepare the LASCO® Butter Beans: Drain and rinse the butter beans from the can. 

Step 2  

Cook the LASCO® Butter Beans: In a skillet, heat 1 tablespoon of olive oil over medium heat. Add the chopped red onion and minced garlic, sauté for 2-3 minutes until softened.

Add the LASCO® Butter Beans to the skillet, along with the remaining tablespoon of olive oil, balsamic vinegar, ground cumin, salt, pepper, and cayenne pepper or Scotch bonnet powder. Cook for another 1 minute, stirring occasionally, until everything is well combined and heated through.

Step 3

Crush the LASCO® Butter Beans: Using a fork or potato masher, gently crush half of the butter beans in the skillet. This will create a mixture of crushed and whole beans for texture variation.


Prepare

Toast the slices of crusty bread until golden brown and crispy. 

Assemble 

Spoon the butter bean mixture onto the toasted bread slices, dividing it evenly among them. 

Sprinkle crumbled feta cheese on top of each bruschetta. 

Serve 

Garnish with fresh parsley if desired, and serve immediately as a delicious appetizer or light meal.
